Copy the contents of this file to ~/.gtkrc-2.0 if you want white text in your gnome panels. http://brentroos.files.wordpress.com/2007/01/gtkrc-20.txt

If ~/.gtkrc-2.0 doesn't exist, save that file as it.

Only thing you can't see is a right click menu for launching my programs.
